Healthy Strawberry Lemon Chia Parfait Recipe
Bright, creamy layers with real strawberries and lemon that hold together long enough to actually eat.
Ingredients
- 1.5 cups plain whole milk Greek yogurt
- 2 tbsp honey , divided
- 1 tsp lemon zest , from about 1 lemon
- 1 tbsp fresh lemon juice
- 1.5 cups unsweetened almond milk , or whole milk
- 0.25 cup chia seeds
- 1 tsp vanilla extract
- 2 cups fresh strawberries , hulled and sliced
- 1 tsp lemon zest , for strawberry layer
- 0.5 cup granola , for topping

- The chia layer is done when it no longer looks wet on the surface and holds a spoon indent without sinking. If it is still runny after 8 hours, stir in 1 more teaspoon of chia seeds and wait 30 more minutes.
- Slice strawberries no thicker than 0.25 inch so they layer cleanly without gaps.
- Build parfaits in wide-mouth mason jars if you are packing them for school or work. They stack cleanly and the lid keeps the granola separate until you are ready.
- Swap honey for maple syrup at a 1 to 1 ratio if you prefer a slightly warmer sweetness.

Why the Lemon Layer Does the Heavy Lifting
Plain Greek yogurt in a parfait tastes flat and a little sour without something to pull it forward. The lemon zest and juice change the texture slightly, making it smoother, and the smell shifts from dairy-bland to actually appetizing.
One tablespoon of fresh juice is enough. Bottled lemon juice will technically work but the smell is muted and you will notice the difference when you open the container.
Making This Work With Kids in the Morning
I mix the chia pudding on Sunday night and it covers the whole week if I double the batch. The yogurt layer takes 2 minutes to stir together and keeps for 4 days covered in the fridge.
My kids build their own once they knew the order. Letting them pour the strawberry juice over the layers was the thing that made them stop asking for something else.
