Cover and refrigerate for at least 8 hours or overnight. By morning, the mixture will be thick, spoonable, and slightly wobbly when you tilt the jar.

In a separate small bowl, stir together the Greek yogurt, 1 tablespoon honey, lemon zest, and lemon juice until smooth. It should smell sharp and fresh, like lemonade concentrate. Taste it. It should make you want more.
